Banana bread

My mate Emma made some COSMIC banana bread last week and Lucy had to nick the recipe. We’re going to make some this Saturday. We’ll video the results.

8oz self raising flour
1/4 tea spoon bicarbonate of soda
A pinch of salt
3oz butter
6 oz caster sugar
2 medium eggs beaten
1lb bananas weighed with skin peeled and mashed
4 oz walnuts (or raisons)

Preheat oven to gas mark 4.
Grease a 2lb loaf tin.
Mix together flour with bicarb and salt.
Cream butter and sugar until pale and fluffy.
Add eggs a little at a time alternatly with the flour.
Stir in remaining flour, bananas and walnuts.
Put in tin.
Bake for 1 1/2 hours.
Cool on a wire rack.
